Clubhouse Sandwiches

When I first met Wil his favourite meal, any time of day, was a clubhouse. He could name every place in Tofino that served them, and rate them all according to price, ingredients, taste, aesthetics, location of eatery and availability.  His general favourite was the clubhouse at the Weigh West, but that involved a walk out of town a bit, and usually required a beer to wash it down, then with table service you ended up with quite a tab and it lost out on price.  

A second favourite was from Gary's, the Chinese restaurant in town. They were closer to home, and right on the home-work pathway which was rather convenient. They also had a side of gravy and were a little cheaper than anywhere else in town, but were far from pretty. 

The best of all was the home made option. This involved a lot more time and effort, but you ended up with a guaranteed tasty meal and usually enough for another round the next day. And it was to this option that we turned to on a lazy Saturday morning, without knowledge of any good clubhouse spots in town.  It's a pretty easy and tasty brunch to create for two, here's how:

toast two slices of bread
slather on some mayo
pile on some chicken or turkey slices
toast two more slices of bread
coat each side with mayo and put on top of the chicken
slice a tomato and pop on top, then sprinkle over salt & pepper
fry up some bacon, but don't make it too crispy
pat down with a paper towel and add to the pile o'sandwich 
add a couple of leaves of crunchy lettuce
toast the last two slices of bread, coat the underside with mayo and put the lid on your sandwich


this makes a perfect brunch for two, served with coffee, juice or Caesar if your morning is like that.

Apparently the Americans invented this morning delight and that's not surprising - if you order this anywhere in North America you're likely to end up with at least half a packet of turkey and a good portion of pig on your sandwich.
