I had so many good intentions for tonight: sunset run, walk with Ralph, nice hot shower, relax on the couch and catch up on some TV and some writing. A perfect Tuesday night. But it wasn't to be.

This morning when I awoke I was scratching at my back. By midday I was scratching at my neck, my arms, my legs. It was epidemic. I emailed Wil, he reported the same. It appeared there was a flea problem. So when I came home there was no running, no relaxing, no gentle stroll. Instead it was a mad flurry of linens as I stripped everything in the house and set about the laundry. By the time one load was washed and hung out, another put on, Ralph walked (ok, almost dragged around the park), fed and medicated, flea powder administered to every corner of the house it was almost time for bed! I needed something to eat, something quick and easy, something veggie-filled since there had been no running.
Enter an old copy of Bite that was hanging around in the magazine pile. This pea soup ticked every box: quick, easy and full of veggies. The parmesan croutons and egg on top cranked it up a notch, and made it that little bit special. I ate too many of the croutons, but that's beside the point. If you're looking for something different for a mid-week meal try this, it's good.
