Basic Coleslaw

When I decided to make pulled pork I knew that some kind of veg was needed on the side and it couldn't be just an ordinary salad. Since our favourite spot down the road (Pig) serves their pulled pork with coleslaw I decided to do the same. I read a couple of recipes online and then just kind of made it up as I went along.  What I ended up with is below - Wil said that if I make this more often he'll be more inclined to eat vegetables, and that's a winner in my book!


1/2 a large carrot, grated
1/2 a medium head of cabbage, finely sliced
1/2 red onion, finely sliced
3 tbsp mayonnaise
2 heaped tsp Dijon mustard
3 good splashes red wine vinegar
a pinch of cayenne

Prepare the vegetables and throw them in a bowl. Mix up the dressing ingredients in a small cup and taste. Once you've got the right balance pour onto your vegetables and be surely to mix well.
