Chocolate-dipped ANZAC Biscuits

Moving into this house, and adopting my nana's kitchen I'd kinda hoped that I would pick up some of her traits and talents via osmosis. Not exactly scientific I know, but I hoped. And it didn't work.  My nana was ever the gracious hostess.  When she had guests over she would a selection of drinks ready and a multi-course meal prepared. She always had containers of various kinds of baking on hand should someone stop by out of the blue.  I'm lucky if purpose-baked treats make it to the event they were created for, let alone having something at the ready for a guest to enjoy with a cup of tea. 


So when Dad came over extra early the other weekend to fill his trailer with junk to take to the tip before the rain set in I felt like he needed something sweet to go with his coffee. After a lifetime as a carpenter when morning smoko is taken very seriously Dad wouldn't dream of having his morning coffee without something to snack on, and since we'd been a little less than hospitable lately I figured a batch of something was needed, and quickly.


Cue the Little & Friday cookbook. This Newmarket cafe is so cute it hurts and their baked goods are delicious too! When my lovely brother & sister-in-law gave me the book for Christmas I was super excited to try some of their recipes and yet somehow hadn't managed to these past 5 or so months. But their take on Anzac biscuits was just what I was looking for on this occasion: quick, easy, full of oaty goodness and something a little different with a nice sweet kick from the syrup and the chocolate to get us through the next DIY task at hand. They were all the awesome of a regular Anzac biscuit, plus chocolate, and may just become my go-to Anzac recipe next April. Needless to say they didn't last the night.

Definitely stop by Little & Friday if you're in Newmarket, or else try these at home and pretend. Yum!

Anzac Biscuits a la Little & Friday
1 cup flour
1 cup coconut thread
2/3 cup tightly packed brown sugar
1 cup jumbo rolled oats
125g unsalted butter
2 tbsp golden syrup
1/2 tsp baking soda
2 tbsp boiling water
200g good quality dark chocolate, melted

Preheat oven to 160 degrees and line two baking trays with baking paper.

Place flour, coconut, sugar, and oats into a mixing bowl and combine.  Melt butter and golden syrup over a low heat.  While this is melting combine the baking soda and boiling water and stir.  As it fluffs up stir it into the butter mixture. Quickly pour the butter mixture over the oats while still fluffy and stir to combine.

Using a tablespoon, roll spoonfuls into balls and place about 3cm apart on the baking paper, flattening each slightly.  Bake for 15-20 minutes until lightly golden. Once cool, dip in melted chocolate. Try not to eat them all in one go!
