Ok, so I am a bit late posting this one. If you had any feijoas left it's likely they would have been blown away in recent storms, but maybe there's still some at the supermarkets. If so, grab them and make this cake!
I almost kept this a secret and had it all to myself. Wil, claiming he wasn't a fan of feijoas or dates, initially decided he wouldn't like the cake which gave me a bit of a head start. However late one evening, well past my bedtime when he was craving something sweet, he decided that a wee mouthful of this cake couldn't be that bad. And then it was over. From that evening on I found myself fighting for each and every piece - although there wasn't much fighting since there were but crumbs come Sunday morning, a mere two days (and three nights) after it came out of the oven.
It's moist and fruity and all well and seasonal, if you've fruit left that is. You should try it. It's good.
Feijoa, Apple & Date Cake adapted from FoodHub
100g butter
1 cup dates, chopped
1/3 cup sugar
3/4 cup feijoa, mashed
1/3 cup apple, stewed
1 egg
2 tbsp milk
1½ cups flour
1 tsp baking powder
1 tsp baking soda
Preheat oven to 180C.
Beat together butter and sugar until light and creamy. Beat in egg.
Sift together flour, baking powder and baking soda. Fold into creamed mixture.
Stir in dates, feijoas, apple and milk.
Spoon mixture into prepared tin. Bake for 45 minutes, or until a skewer inserted in the centre of the cake comes out clean.
Leave cake in tin for 10 minutes before turning on to a wire rack to cool.
When cool, ice with lemon cream cheese icing.
