Jamie's Botham Burger

To me, Jamie Oliver seems like a man who knows his burgers. He started off working in his dad's pub as a young'un so I daresay he's made a few in his lifetime. It was for this reason that I had no hesitation in choosing his Botham Burger for dinner this week, despite Wil's hesitations. Wil is usually the burger king in our household and didn't wish to be outdone. Even by Jamie.  I didn't really stick to the recipe though, and even though Jamie is all about the playing around with cooking, I don't feel like I can give this a true review without making it as it was intended. I had all the basic ingredients for the burger itself, but I was missing the time and about 60% of the ingredients to make the tomato salsa he suggests as an accompaniment to this and I really don't think it's the same without it.  Don't get me wrong this is one very tasty burger, but with a tangy, salty salsa complete with anchovies and capers I think it would be tht much better. Next time I'd love to try and make the salsa before hand so we can really do this burger justice, and I'm pretty sure it would go well on other dishes so that'll be a post it note on this page.  For now, here's Jamie's botham burger. As he would put it. Pukka.

No photos tonight, it was my first night back to running group and I was hungry!

1kg minced beef
2 medium red onions, finely chopped
2 eggs
1-2 handfuls fresh breadcrumbs,
1 tbsp coriander seeds, crushed
1 small pinch cumin seeds, crushed
1 heaped tsp Dijon mustard
salt & freshly ground pepper

Preheat the oven to 230 (450 F). Mix and scrunch all the ingredients together. Use the breadcrumbs as required to bind and lighten the mixture. Divide into 4, then gently and lightly mold and pack each burger together into smallish cricket-ball sized shapes. Place in the oven and roast for 25 minutes, which should leave the middle slightly pink and the outsides nice and crispy. Serve with a griddled bun, a little salad, some gherkins, tomato salsa (next time!) , a pint of Guinness (or Blue Buck) and a bottle of ketchup.
